To “my Nancy…”

Nancy’s Supper Salad

One of the most wonderful women in the world, to me, is Nancy. The mother of an old friend, she helped me visualize a standard of dinner & food that did not involve a box. It was crazy…salad with lettuce, cucumber, tomato, mayonnaise, salt & pepper…just enough “home-made” for me. One time, when I was helping to prepare dinner at her house by chopping potato, she asked “can you chop it small.” I said, “yes,” then proceeded to dice finely the potato. She saw this and became shocked…”not THAT small.” Still, since my mother became relieved of cooking by the 70s thanks to Banquet and Swanson, it was such a lovely experience to be in the presence of real cooking. Thank you to Nancy for all that you did for me.

Supper Salad

  • One bag (plus) of bibb/butter lettuce (or a whole head torn, if you can get it)
  • Two-three chopped tomatoes
  • One fully-chopped seedless cucumber
  • 1/2 c. Best Foods Mayonnaise
  • 1+ tsp kosher salt
  • pepper too taste

Mix mayo, salt & pepper in a small bowl. Mix all other ingredients. Toss dressing with salad fixings. Serve with fresh cracked pepper & freshly grated Parmesan cheese.
